SUMMARY: The Roswell Convention Center is looking for a banquet-event chef to provide exquisite and savory dishes for special events held at the Convention Center. The Chef will be responsible to develop new banquet menus, prepare, test, taste and control out new menu items. Maintain updated and accurate recipes and costing of all dishes prepared for banquet functions. The Chef will oversee the food preparation and catering of the event while ensuring superior quality and consistency always. Essential duties and responsibilities may include, but are not limited to, the following:Orders, receives and prepares all food itemsMaintains food costs and budget goalsReviews Banquet Event Orders (BEO) daily and makes note of any changesCooks and produces required meal according to Banquet Event Orders for each eventDevelops proposals for potential clients, to include tastings on larger plated eventsSupervises and coordinates all activities of cooks and banquet kitchen staff who are engaged in food preparationReports on event-by-event food costs to General Facilities ManagerCoordinates banquet production and plating with kitchen temp staffPlans and manages food quantities and plating requirements for all banquet functionsMaintains food preparation handling and correct storage standardsFollows proper handling and right temperature of all food productsEstablishes the day's priorities and assigns production and preparation tasks for the temp banquet kitchen staffEffectively communicates both verbally and in writing to provide clear direction to staffTakes physical inventory of specified food items for daily inventoryAssists in determining the minimum and maximum stocks of all food, cooking supplies and equipmentMaintains an active role in local hospitality community and professional associationsAttends in-house event-related meetings and relays immediate changes with other departmentsCollaboration and development of menus and other projectsMaintains all kitchen equipment cleanliness and annual maintenanceMaintains inventory control procedures and ensures the banquet kitchen is prepared for the following day's workResponsible for managing all day-to-day operations of banquet kitchenResponsible to conduct frequent walkthroughs of kitchen area and direct respective personnel to correct any deficienciesResponsible to maintain all equipment in a proper operational conditionResponsible to oversee the regular cleaning of all equipment used in the banquet kitchenEnsures each banquet kitchen work area is stocked with specified tools, supplies and equipment to meet the Convention Center operating and business demandEnsures recipe cards, production schedules, plating guides, photographs are current and postedEnsures all staff prepares menu items following recipes in accordance with health guidelines Hires and Trains of all kitchen staff to ensure compliance with health department regulationsMaintains a Health Department score of 90 or higherAll other duties as assignedMINIMUM QUALIFICATIONS:A minimum of 5 years of experience in a high-volume banquet kitchen or full-service restaurant kitchenProficient knowledge of computer systems and sales-related software applications, specifically Microsoft Office PowerPoint, Excel and WordExcellent written and verbal communication skills, including the ability to present in front of small and large groupsAbility to solve practical problems and deal with a variety of concrete variables in situations where only limited standardizations existMust be flexible, resourceful and possess a keen ability to find solutions in the kitchen to meet the clients needsStrong organization skillsStrong team player with ability to work independently Ability to work flexible hours, including some evenings, weekends and holidaysAbility to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions and decimals. Ability to compute rate, ratio and percent and to draw and interpret bar graphsMaintain a professional image and manner with customersLICENSE AND CERTIFICATION REQUIREMENTS:Must possess and maintain a valid Class D drivers license issued by the State of New MexicoPHYSICAL DEMANDS AND WORKING ENVIRONMENT:Frequently lift/carry up to 25 lbs.Occasionally lift/carry up to 50 lbs. Ability to reach with hands and arms in any direction and kneel and stoop repeatedly Ability to stand for long periods of time PRE-EMPLOYMENT REQUIREMENTS: Must be able to pass a rigid background investigation including work history, criminal records, driving records and other records deemed necessary.
